Jamie Boudreau (Lumiere in Vancouver, Vessel here) finally has his own bar, Canon: Whiskey and Bitters Emporium. Itโs where Licorous used to be, and the peachy Dream Date decor has been replaced with dark upholstery, an antique cash register, a bar stained with Angostura bitters (on purpose), and such an extensive and beautiful liquor collection, itโs somewhat unbelievable. Boudreau wants his patrons to be โensconced in booze.โ To that end: a 100-drink menu-book. Also: barrel-aged cocktails served in glass flasks, punch-bowl service, and more, more, more. We lucked out after a long sunny day at Bumbershoot when we dropped by Canon just to see if it was open yet. Jamie had decided to open tonight with little advance warning to do a little testing, and that enable us to try to Canon Cocktail and the pork burgers, both of which were excellent. I’m looking forward to coming back often when the full menu is available.
A beautiful bar for sure. Thank you for noting the ridiculousness of the culture, I mean the $10 cocktail.

If you think $10.00 for a hand crafted, expertly made cocktail with premium liquors is too expensive, you are probably, young and poor.
This bar is not for you.
Good to see another place getting on the old fashioned cocktail bandwagon.
@2, So stick to places with 75 cent Pabst or $2 whiskey sours made with gasoline grade whiskey. It is probably more your scene.
